Paleo Gingerbread Spice Cookies



It’s about holiday time so I may be posting a lot of recipes in the coming month. Today is a cold, cloudy day- perfect for baking. I love these cookies- they are like chewy gingersnap cookies. The best part is, they are vegan, maple syrup sweetened, and totally healthy! They don’t last long around here.

I meant to count how many this batch makes… but.. they are gone. I think it was about twelve?


Paleo Gingerbread Spice Cookies


1 3/4 cup almond meal/ flour (blanched or unblanched, either is fine)

1/8 tsp salt

1/4 tsp baking soda

1/2 tsp cinnamon

1/4 tsp ground cloves

1/4 tsp ground ginger

1/4 cup maple syrup

1/8 cup coconut oil, melted

1/8 cup molasses

1/2 tsp vanilla


Preheat oven to 350. Combine all dry ingredients and blend well. You can mix the wet ingredients in a separate bowl before adding, but I usually just add them directly and mix everything together. Form into balls- about a tablespoon of dough per cookie. Place on a greased baking sheet. They will flatten out as they cook so no need to flatten. Bake for about 15-20 minutes until slightly brown on the bottom. I like mine chewy so I err on the side of less done. Cook a little more and they’ll be more crispy.








  1. I am really excited to try these, Aomi! They look delicious! I have a son that cannot have coconut products at all right now. Have you tried making them with a different oil, by any chance?

    • I haven’t, Nichole. The only other oils I really use are olive oil and butter, so those would be my suggestions if he can have either. I’m afraid I’m not much help besides that, so your guess is as good as mine. I’m sure any other vegetable oil would work fine but may not be as healthy. Good luck!

I really only use my cookie sheets for roasting veggies – I never bake, but I’ve made these babies twice in the last week and I don’t even mind because they’re practically a health food! I can’t get people the recipe fast enough. Thanks, Aomi!

  4. I tried them, and the recipe failed. So sad. Not sure what I did wrong. If I do try them again, I’d add a little more spice.
